Skills must be demonstrated in an operational tourism, travel, hospitality, or event operation for which physical assets are monitored and maintained. This can be: an industry workplace a simulated industry environment.

Assessment must ensure access to current commercial purchase specifications, supplier product and cost information, and contractual documentation used for the purchase of assets. Assessors must satisfy the Standards for Registered Training Organisations requirements for assessors.

Decision making rules:

This is a summative assessment, to be deemed competent for this assessment you must achieve a minimum grade of 50% as set out in the marking criteria.

Plagiarism will be dealt with according to the student handbook. The criteria for assessing the student’s submission, grade level, and percentage contributions to the overall grade are outlined in the marking criteria

Reasonable adjustment for assessment

Where students have highlighted Language, Literacy and Numeracy issues reasonable adjustment to the assessment can be made. Should you receive a ‘Not Yet Competent’ or ‘Resubmit’ result for the assessment you will be given the opportunity to re-submit your assessment work with any amendmentsrequested by your trainer.

The adjustment may include actions such as:

  • Student demonstrating knowledge through verbal discussion to identify correct answers
  • Student demonstrating knowledge through applied skills
  • Allowing additional time relating to disability
  • Through consultation amending assessment timeframes
  • Assistance in the form of the training location to allow easier access
  • Accessing relevant equipment or aids to assist the student
  • Adjustments to the assessment methods to cater for any special needs (without effecting theintegrity of the outcome)

If a student requests or is identified as requiring reasonable adjustment to the training and assessmentprocess a detailed training and assessment plan including timetables, notes regarding the required adjustments, and any related communications regarding the adjustments must be maintained in the student’s file.

The RTO Manager must review and authorise any request for ‘reasonable adjustment’ to ensure that any adjustments and resulting outcomes are not affecting the integrity of the training and assessment process.

Location of and completion timeframes for assessment

The location of the assessment will depend upon the nature of the assessment. Direct observation of student’s skills will be assessed in the practical commercial kitchens / simulated restaurant at Academia or workplace, the timeframes for these assessments will be related to the scheduled times of the practical classes. Other assessments such as role plays, in class activities, presentations and written tests will be conducting in the classroom. The timeframes and due dates for these assessments, as wellas any reports, projects, or research assignments, are documented in the stage outlines. Stage outlinesare handed out at the beginning of each term.

Assessment 2 - Project

The project in Assessment 2 consists of 2 parts, this is in continuation of Assessment 1

Part C

Requires you to develop a resource management strategy which provides details on how the efficiency of each asset is monitored as well as how and when each asset is maintained.

Part D

How and why will each asset be phased out, will it be sold or disposed of, how and by who. What are the potential costs both financial and to the environment?

For this assessment, the use of forms or templates that would be used in the workplace will be the most suitable format.

Part C – Physical asset management strategy

Task:

Develop a maintenance schedule foreach asset based on the maintenance requirements you Have determined in assessment 1- part B, includethe following details below:

  1. What provisions for collecting feedback of the asset from customers and reports from staff could you use? List and explain three types.
  2. What types of routine maintenance are required for each asset to optomise its performance (e.g., Regular cleaning, inspections, WHS audits, contractor servicing)? Give an example of a problem that could occur with each asset and what you would do to fix it. Will this require a specialist person to fix this issue?
  3. What is the location of the required maintenance, can it be done off-site or away from heavily trafficked areas? Explain your decision.
  4. What is the expected duration and frequency of the maintenance works for each asset?
  5. When would you schedule the times of the required maintenance to not interrupt normal business operations? e.g., slow periods such as during the day, or during closing times at night in high frequency areas.
  6. Likely disruption to operations – what are the likely disruptions and what are the expected impacts?
  7. Explain any relevant WHS issues which may apply.
  8. Provide a summary of cost impacts for human resources (for example where maintenance would,e.g., require penalty rates for maintenance staff) or the costs where contractors are engaged for specific maintenance requirements.
  9. What are the costs of the scheduled maintenance for each asset in terms of parts, contractor fees, and/or the required equipment to perform the maintenance and consumables?

Part D – Physical asset disposal strategy

  1. How will each asset be phased out? Will the asset be sold or disposed of who when and how will this be done? List the OHS factors that need to be addressed?
  2. What are the costs associated with the disposal of the asset? How will this affect the life cost of the asset?
  3. What are the potential environmental concerns of this asset being phased out, both positive and negative? What industry accreditation schemes can assist your organisation by informing your choice of equipment based on your company’s environmental sustainability philosophies and practices?
